THE BEST OF FOOD
I made this recipe up over the weekend and I’m eating it for lunch today. It came out rather yummy so I thought I’d share. :)
Ingredients
2 Medium to Large baking potatoes, diced
1/2 Onion, chopped
1/2 Carrot, chopped or grated
1/4 package of Lightlife Gimmie Lean Sausage, crumbled (or your meat substitute of choice, or none if you don’t eat them)
1 tbsp olive oil (or probably less, I don’t think I usually use that much)
1 c fresh or frozen chopped spinach
salt
pepper
garlic powder
parsley
nutritional yeast (optional)
salsa, ketchup or other sauce of choice
Heat oil in a large skillet on medium. Saute onion and carrots until onions are translucent. Add in the potatoes and saute for a couple minutes before adding in the meat substitute. Add seasonings to taste. Cook potato mixture, flipping regularly, until potatoes are browned and soft. Right before you’re finished, add in the chopped spinach, cooking until slightly wilted and dark green (or until defrosted and warm if using frozen). Spoon on to plate and top with ketchup, salsa, BBQ sauce or whatever floats your boat.
Makes 2-3 servings.
I’d post a picture if I thought to take one. But hash isn’t exactly camera-friendly fare anyway. It’s tasty though! :)
